Penne Pesto [ Recipe + Video ]
This pesto recipe is a weekday staple for us. The added potato makes it a bit more filling and sucks up that beautiful pesto goodness. We hope you enjoy with friends, family and lovers.

Penne Pesto
INGREDIENTS - Serves 4
1 x 400g bag sourdough penne
2 x bunches of basil
200ml olive oil
4 garlic cloves
300g macadamia nuts - toasted -
250g parmesan cheese
2 good handfuls green beans
3-5 baby potatoes - steamed - sliced
we like kipflers
1x lemon - juice
Salt & pepper to taste
METHOD
1. Bring large pot of salted water to the boil, add pasta and set timer for 6 minutes
2. Blanch green beans in salted water for 3 minutes or to your liking
3. Add a good glug of olive oil to a fry pan, add potato slices and fry until cooked and crispy
4. Grind salt and garlic in a mortar and pestle (or food processor), add nuts, parmesan and basil until combined. Add 150ml of olive oil incrementally and juice of half a lemon to the pesto
5. Stir 3-4 tablespoons of pesto into the pan with the potatoes, and add the green beans
6. Toss through the cooked pasta
7. Top with grated parmesan... yum.
