Frequently Asked Questions
Our Food
Sourdough is bread that has been naturally leavened, meaning it does not rely on commercial yeasts to rise. Instead, a fermented flour and water mixture, called a ‘starter’ (aka our sourdough mama), that contains wild yeasts and beneficial bacteria is used to help the dough to rise.
Most of our bread is sourdough; except for our baguettes, burger buns and seed loaf.
Besides its good taste and chewy texture with a crunchy crust, the naturally occurring lactic acid bacteria, wild yeasts and long fermentation process required for sourdough bread make it a healthier and easier to digest choice than your average loaf of bread.
We stock a range of Nonie’s breads, which are certified gluten free by Coeliac Australia. Our crackers and our muesli biscuits are also certified gluten free.
We also make several products that do not naturally contain gluten, but as our bakery uses shared equipment we cannot guarantee these items to be completely gluten free.
Whilst we do our best to avoid cross-contamination - our bakery produces food containing gluten, nuts, seeds, grains, cereals, peanuts, sesame, dairy, eggs and soy and so we cannot guarantee them to be free of these.
We strive to use organic produce from either our garden in Terrey Hills, or from organic farmers like our friends at Block 11 Organics. All our flour is either certified organic or certified sustainable from Wholegrain Milling Co.
For our packaged products we aim to always use recyclable packaging and where possible it is compostable. We are continually working to improve our packaging where we can and if anyone has any wonderful planet friendly packaging ideas we may not know about - please get in touch!
In one of our reusable bread bags! Or wrapped in a large cotton tea towel - let the bread breathe and don’t put it in the fridge!
If you wish to savour your loaf for more than a few days, slicing and popping it in the freezer the day that you purchase it ensures fresh slices of toast for you to enjoy as you please.
Yes, we sell ‘Berkelo dough’ - find it here or head in to one of our shops to buy in person.
A Poolish is a highly fluid baker's yeast-cultured dough. It’s a type of pre-ferment traditionally used in the production of French bakery products. We use it to make our baguettes.
During normal times (pre-Covid 19) we ran a series of sourdough and fermentation workshops. We plan to offer these again in 2023. Sign up to our newsletter and keep an eye on our Instagram page for more info as things change.

Our deliveries are made in refrigerated vehicles. This may seem counterintuitive for bread and pastry but allows us to send chilled and frozen items too. We have included warming instructions for all items that don’t usually like the cold. Our chilled and frozen items will need to go straight into the fridge on arrival. Bread and pastry can be stored in ambient temperatures and should be consumed within 48 hours to maximise enjoyment.
All orders placed by 2pm will be available to collect in store after 8am the following day. There are a few exceptions to this. Our family cakes and big loaves require extra preparation time (48 hours).
Deliveries will be made between 11am and 7pm. We are unable to provide more details around delivery times. Please ensure someone will be home to receive the delivery or provide instructions where you would like your order left.
