We believe simple food is the best food and we like to let ingredients speak for themselves. No refined sugars or sweeteners are ever used in our kitchen—instead we turn to raw honey, organic maple syrup and rapadura cane sugar. Berkelo's naturally leavened loaves do not contain any commercial yeast or additives. Our long-fermented breads spend no fewer than eighteen hours cold fermenting before being baked on stone.
